In a small bowl or jar, whisk together the soy sauce, lemon juice, garlic, ginger, mustard, honey and pepper. Then, add the oil in a steady stream, whisking constantly (it helps to have an extra set of hands). When all of the oil is incorporated into the dressing, set aside or store in the fridge (keep in mind that the oil may separate if you leave it in the fridge longer than a few hours).
